When Starbucks introduced the new Truffle, Mushroom & Brie Egg Bites as part of the chain’s 2026 winter menu, I was curious but not fully sold. I’m usually cautious when it comes to egg bites — they’re convenient, but sometimes they can taste too eggy. However, I’m also very much into Brie and truffle-flavored food, so I had a feeling these bites might win me over.

And any quick meal that promises to fill me up deserves a try — especially when my mornings are typically rushed. So when Starbucks offered me the opportunity to taste the new egg bites, I couldn’t pass it up.

What Are Starbucks’ Truffle, Mushroom & Brie Egg Bites?

This new flavor of Starbucks egg bites is made with cage-free eggs, black truffles, mushrooms, and creamy Brie (they also contain cottage cheese and Monterey jack cheese) — all cooked sous-vide style to create a smooth, velvety texture, according to Starbucks. They joined the menu on January 6 for a limited time as part of Starbucks’ new winter food and drink drop, and I think they slightly elevate the chain’s usual breakfast offerings. 

They’re small, warm, and easy to eat on the go, which immediately makes them a solid option for busy mornings. I was impressed with the 14 grams of protein, too. I paid $5.86 for the bites, which come in a pack of two, in North Carolina.

My Honest Review of Starbucks’ Truffle, Mushroom & Brie Egg Bites

The first thing I noticed was the strong truffle scent (which I expected, as truffle is a standout ingredient), but I was shocked by how authentic they smelled, given it’s a frozen food item. I also immediately tasted the truffle flavor when I took a bite, and that flavor carries through with every bite. For me, that immediately set these apart from Starbucks’ regular egg bites.

Texture-wise, these were a little spongy, light, fluffy and surprisingly filling. The mushrooms are chopped into noticeable chunks throughout, which I loved, and the Brie adds a creamy richness without overpowering everything else. Together, it genuinely tastes like a tiny omelette rather than a pre-packaged egg product.

Most importantly for me, they don’t have a strong egg flavor. If you’re someone who gets the “egg ick” easily (me), this is a huge win. The truffle and mushroom do most of the heavy lifting, so the bites feel really balanced (and a little fancy!). If you really like a truffle flavor, these are a must-try. 

They’re also easy to eat while walking to class or commuting — and unlike some Starbucks breakfast items, they actually made me feel full. 

My Final Thoughts on Starbucks’ Truffle, Mushroom & Brie Egg Bites

I will 100% order these again because they’re by far my favorite egg bites Starbucks has ever offered — especially when I’m in a rush and want something that feels more substantial. They’re flavorful, filling, and taste more like a real meal than a snack — they easily kept me full until lunch. 

I paired mine with the new Pistachio Cortado. The flavors were both strong that one didn’t overpower the other, and I loved how my meal was bite-sized and a little bit fancy.
