I think the best ice cream is in the form of a sandwich. Sweet, creamy ice cream sandwiched between two cookies — what more could you ask for? As soon as summer rolls around, ice cream sandwiches go right back on to my grocery list, and one of my all-time favorite brands is FatBoy (aka the winner of our ice cream sandwich taste test).

The legacy brand is celebrating its centennial this July (it has been in the ice cream biz since 1925!). To commemorate its 100 years of churning out quality frozen desserts, FatBoy recently released its Birthday Cake Ice Cream Sandwich Pops

What You Should Know About FatBoy Birthday Cake Ice Cream Sandwich Pops

I first saw these birthday cake ice cream sandwiches popping up on Instagram back in February, and have been thinking about them ever since. The pops feature birthday cake ice cream sandwiched between two vanilla cookies dipped in frosting and coated in crunchy rainbow sprinkles.

Plus, unlike its other ice cream sandwiches, Fat Boy is serving these up on a wooden stick (which means mess-free hands). The ice cream sandwiches come in a pack of four for around $4.99 and are available at Walmart, UberEats, and more retailers across the country where other FatBoy sandwiches are sold.

My Honest Review of FatBoy Birthday Cake Ice Cream Sandwich Pops

Birthday cake ice cream is my usual order, and I’ve always been a fan of ice cream sandwiches, so going into this test I had pretty high expectations. I’ll start by just cutting to the chase: They’re just as delicious as I’d hoped.

The ice cream filling was sweet and tasted like cake batter (high praise), and the wafer had the same texture as the O.G. chocolate wafers but with a vanilla flavor instead. The two together are just … fabulous. Plus, the white chocolate coating and sprinkles add another layer of crunch that makes this ice cream bar texture heaven.

At first, I thought the wooden stick was a bit silly, but after eating one of these sandwiches in the hot sun, I came to the conclusion that it was actually ingenious and allowed for completely mess-free eating.
